Gone are the days when Sherry was mainly enjoyed by Nanna and Pop after dinner by the fire while watching The Sullivans. This old school bevvy is enjoying a fabulous renaissance and The Sandy Mandarin puts it to good use. Build the ingredients in a tall glass over ice and garnish with a slice of dried Wakame/nori. Dial it up a little with umami for that extra punch.
